Creative Quarantine- Dempsey Hall

At the beginning of the pandemic, so many aspects of my life felt out of control: Beaches were closed, vacations were cancelled, and friends and family were socially distanced. In an effort to regain some semblance of control, I sought solace in cooking, and turned to my kitchen for some much-needed comfort.

My partner, Jon and I have always enjoyed cooking, particularly from scratch using fresh ingredients, but we never seemed to have enough time to take on ambitious recipes. That changed, however, when the two of us made the transition to working from home full-time. The mandated slow-down forced us to take a step back and reflect, and suddenly, we realized there was finally enough time for everything.

Since then, we’ve spent the past few months tapping into our creative sides and rolling out some delicious creations. From homemade pretzels, to black bean brownies, to sourdough bread, fresh tortillas, and even cheese, we’ve distracted ourselves in the tastiest way possible. Quarantine has been the best catalyst for our culinary creations and has taught us lessons we never even knew we needed. Here are some of the recipes we used:

Black Bean Brownies

Fresh Mozzarella Cheese

Homemade Corn Tortillas
